After my jackfruit pot roast, this recipe comes in as a close second favourite! It's easy to make and perfect for those who've never tried jackfruit or encountered issues with its brine taste. Through a meticulous process, a blend of seasonings and sauces, it completely elevates the flavour, transforming jackfruit from a mere veggie taste to a succulent, meaty bite.

2 (400g) cans young green jackfruit

2 fresh thyme sprigs

½ tsp dried sage

2 tsp all purpose seasoning/chicken seasoning

1 tsp smoked paprika

1 tsp onion salt

2 tbsp oil

2/3 cup BBQ sauce

¼ cup ketchup
Directions
Preheat the Oven: Preheat your oven to 190°C (375°F).
Boil the Jackfruit: In a pot, bring water to a boil. Add the drained jackfruit, thyme, and dried sage, and boil for 8 to 10 minutes. This helps soften the jackfruit. Remove the pot from heat and drain the jackfruit. Transfer the drained jackfruit to a mixing bowl.
Season the Jackfruit: Transfer the drained jackfruit to a mixing bowl. Add the all-purpose seasoning, smoked paprika, onion salt, and oil to the bowl with the jackfruit. Mix everything until well combined and the jackfruit is evenly coated with the seasonings.
Bake the Jackfruit: Place the seasoned jackfruit onto a prepared baking tray. Drizzle a bit more oil over the top if desired. Spread the jackfruit out in a single layer on the tray. Bake in the preheated oven for 20 minutes, or until the jackfruit starts to brown and crisp up.
Prepare the BBQ Sauce: While the jackfruit is baking, mix together the barbecue sauce and ketchup in a small bowl until well combined. Set aside.
Coat the Jackfruit with Sauce: Once the jackfruit has browned, remove it from the oven. Pour the BBQ sauce mix over the cooked jackfruit. Gently toss the jackfruit until it's evenly coated with the sauce.
Caramelise Jackfruit with Sauce: Return the sauced jackfruit to the baking tray and spread it out again in a single layer. Place the tray back into the oven for an additional 5 minutes to let the BBQ sauce caramelise.
Serve: Remove from the oven and serve hot. It can be served as a filling for sandwiches, tacos, or enjoyed on its own!
